Debut cooking post.... PASTA AND SHRIMP T&J SAUCE.


Before i begin.... pardon the bad picture quality, used my phone to take the pictures, they looked good on my phone..too bad they are not quality looking here..... *raises right hand* "I do solemnly swear that I will take and upload better pictures on my next post and make your mouth water like it should"


So on Sunday after church...I was hungry and was craving some jollof rice, so I went to the store , bought some fresh tomatoes (I try to mix can crushed tomatoes with fresh ones....better flavor) and plantains (you can never...ever!! go wrong with some dodo...lol) and of course some malt (I'm a sucker for malt)
I ended up spending about 2 hrs because there was a payless shoe store right beside the food store (yes...sometimes I shop at payless....don't judge me!! I am not balling enough to afford louboutins. lol)

well, so I got back home and I was bringing out the food from the trunk of my car, then I saw IT.... normally I am not one to go to the store and buy pasta, but someone had "dashed" me this pack of pasta and I just threw it in my trunk and didn't bother about it....till Sunday....
then after I saw it again...I suddenly started craving pasta like no mans bidness!!

so i decided to make pasta and shrimp tomato and jalapeno sauce. didn't really have a recipe from the start. I was just adding things as i was cooking, i guess I was so hungry that i didn't even care! lol......
here are some pics and the recipe. :)

             


     I PROBABLY SHOULD HAVE MADE IT LOOK MORE APPETIZING AND ALL.... BUT BELIEVE ME IT WAS DELIZIOSO (DELICIOUS)..... I WAS IN A HURRY TO EAT IT SO I JUST MIXED IT ALL UP, DUMPED IT IN MY PLATE AND DEVOURED IT IN LIKE 5 MINUTES MAX.... LOL.


INGREDIENTS:
1 pack of pasta
1 onion
about 7 fresh tomatoes
jalapenos (i used like 5, it really depends on the person cooking)
raw large shrimps. (1 pack)
salt
red pepper
Cameroonian pepper (I use this for EVERYTHING!! lol...very spicy)
oil
garlic
maggi (optional).

Recipe:
Cook pasta in water, I add some oil, like one tablespoon in the boiling pasta because they tend to stick the pot when cooked and water dries up.

remove the shell and clean raw shrimp, season and boil with little water till it turns pinkish orange and the head and tail of the shrimp start to almost form a  "9" shape (well sort of).......(when raw, shrimp is more like a C shape, when well done, its usually a little less than a complete 9 shape)

chop onion, tomatoes and jalapenos,
pour oil in a saucepan and when hot, pour in the onions and jalapenos, after about 4 minutes or less, pour in tomatoes and cover to cook for a while
when the raw taste and smell of tomatoes has reduced to an extent, add spices... cover and let cook for a while till sauce is ready and well cooked.

put the cooked shrimps in a pan and drizzle some oil on the shrimps, sprinkle some pepper on it and fry for about 3 minutes. Shrimp should not be properly fried, just semi-fried.

pour shrimp into T&J sauce.

add T&J sauce in bowl or pot of pasta and mix till pasta and sauce are properly mixed.

serve with wine, water or your choice of beverage.

    i semi fry the shrimp bcos i didnt really want it to harden as much as fried seafood tends to do on the outside..... i just wanted it slightly crispy.

  6. Pity I react to shrimps or I woulda tried this... Looking forward to more posts... I also enjoy cooking but cuz of my allergies, I'm limited to stuff I try! :(
